WHere is an easy take on a beverage found on a new drinks list. Designed as a party-sized premix that's loaded with the flavours associated with festive period, making it ideal for a celebration. Any leftover syrup to use in brunch beverages, puddings, or for another batch of the drink.
The Bikini Cocktail
Makes enough for 10 people
To make the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Drink (makes 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Method
Making the Citrus Syrup: Place the listed ingredients in a pot, bring to a simmer, stirring to dissolve. Next, take off the burner and leave to reach room temperature fully. Decant into a sealable bottle, seal and store in the refrigerator, where it will keep for up to four weeks.
For the Cocktail Base: Mix every spirits and syrup into a large bottle, let it rest for one hour, then pass it through best through a fine cloth, making it completely strained.
When ready to serve: Add 85ml of the premix into a cocktail shaker packed with ice, and stir carefully for one minute until cold. Filter into a frosted cocktail glass or a similar vessel, garnish with the cranberries and finish by giving it a light spray of mandarin oil over the top.
